This is a quick dish for noodle fans. The difference of Lomie compare to other noodle is in the soup. It uses a beaten egg, pour into the hot soup. In the old days, I remember my mom used to make this for us and of course she uses her homemade noodle too. The vegetable that goes well with this dish is the Chinese Cabbage called Choy Sum. But since I don’t have it handy today, I substituted it with Scallion. This recipe serves for 3 people and to be eaten while hot.
INGREDIENTS:
5 cups of water
2 pieces of chicken thigh
1 pack of dried noodle
3 stem of scallion – cut into 3cm length
2 teaspoons of sesame oil
1 teaspoon of minced garlic
3 teaspoon of oyster sauce
1 teaspoon of salt
pepper
3 pieces of eggs – beaten
INSTRUCTIONS:
First boil the chicken meat with the 5 cups of water until the meat is cook. Then shred or cut the chicken to small pieces and put back into the soup. Separately, heat up a pan, pour in the sesame oil, then stir fry the minced garlic until slightly golden. Then pour the sesame oil and the fried minced garlic into the chicken soup. Add noodle, scallion, oyster sauce, salt and pepper. Let the soup boil until the noodle is cook, but not too tender. Then pour in the beaten egg, when doing this, use a low heat and keep stirring. Make sure that the egg is cook, then ready to serve.
