Lotus Root Soup
14 04 2008This is one of many soups that my mom used to make. It’s been mine and my sibling’s favorite. My sister, Jq, likes to put in more of the Chinese herbs commonly used in the Chinese Chicken Herb Soup, but I make it different this time. All the ingredients can be find at an Asian market. I got them at 99 Ranch Market. I also took pictures of the ingredients - see picture above.
INGREDIENTS:
300 gr pork meat - cut into medium size cubes
1.5 pieces of lotus root - peel of the skin then cut into 1/2 cm thickness
2 big pieces of dried white fungus
1 handful of white bean (you can also substitute this with lotus seed) - soak in a bowl of water over night
1.5 tablespoons of salt
pepper
7 cups of water
INSTRUCTIONS:
Put all ingredients into a pot, then let it boils until the meat is cook and the white beans are tender. Ready to serve.
