Shrimp and Pork Gravy over Crispy Noodle (Ta Mie ala Mama Bunga)

The original recipe comes from my mother-in-law. She makes this dish usually on certain occasion like birthdays. All of us love it a lot. Before we moved to the US, I was able to get the recipe from her but didn’t manage to get the exact measurement. So here is the recipe with my measurement slightly different in taste from hers.

INGREDIENTS:

2 pack of egg noodle (each pack is 200 gr net weight)

400 gr pork meat – cut into small pieces

5 tablespoons of sweet soy sauce

5 tablespoons of soy sauce

2 stems of scallion – cut into thin slices

3 cloves of garlic – cut into thin slices

3 cloves of shallot – cut into thin slices

200 gr of small shrimp – cut into small pieces

2 tablespoons of salt

3.5 tablespoons of sugar

3 tablespoon of sweet soy sauce

pepper

7 cups of chicken broth/water

1/2 cup of water – mix with 5 tablespoons of tapioca starch

INSTRUCTIONS:

1. Marinade the pork meat with the 5 tablespoons of sweet soy sauce and 5 tablespoons of soy sauce. Leave it marinated over night.

2. Boil the egg noodle, then set aside (add 2 tablespoons of vegetable oil to avoid it sticking to one another). Then deep fry the noodle to the size of your palm (or like the shape of instant noodle). Wait until the noodle becomes crispy then put it aside.

3. Deep fry the thin slices garlic and shallot until they turn golden brownish. Then put it aside.

4. Stir fry the cut shrimp on a non stick pan until cook (with no oil).

5. Stir fry the previously marinated pork meat on a non stick pan until cook. Then pour in the 7 cups of chicken broth/water. Add in the previously stir fried shrimp, garlic, shallots, cut scallions, salt, sugar, pepper and sweet soy sauce.

6. Pour in the mix 1/2 cup of water with the 5 tablespoons of tapioca starch into the shrimp and pork gravy. Stir until the gravy is thicken. Wait until boil then pour on top of the crispy noodle. Ready to serve.

Iya Sa, coba deh. Andrew sih karena emang penggemar noodle, bisa makan ini 2 hari berturut. Minta mie mulu. Cuma bikin ini rada lama, karena mie musti rebus trus goreng.

Nat, silahkan dicoba. Sweet soy sauce itu kecap manis, kalo soy sauce aja itu kecap asin. Kalo udah coba, let me know how you like it yah!

ooh gitu, kecap asin kenapa namanya bukan ’salty’ soy sauce aja ya, kan kalo kecap manis ada kata ’sweet’nya, hahahaha…

@ Cen2: You are so welcome. Oh ya si Nelson ngga doyan ama mie, kok bisa yah. Mungkin Andrew dari kecil sama bokap gua suka dikasih mie bikinin rumah kali. Jadi apa2 mie mulu. Kalo pagi suka banget makan misua polos. Scallion itu daun bawang, Cen. Kadang disebut green onion sih.

Kalo misua Nelson suka, cuma satu2xnya jenis mie2xan yang he can accept. Dulu sempet stress n bingung, tapi sekarang mikir nanti juga gede he will eat lah, nobody ngak doyan mie. Hahaha
